Default iPhone vs MAC issues

Friend of mine sent me an email, I have no idea with MACs, I'm thinking some kind of syncing issue?

Apple shop apparently told him its the exchange server.

Heres the email

Ok I have a mac that I just use for itunes, my iphone is registered to that account.
My iphone syncs with that mac. BUT my phone has its exchange server with my new laptop a server based in Denmark
My contacts seem to be multiplying on my phone and in contacts on my lap top, I have some contacts in my phone 12 times and growing.
And some contacts just disappear completely, its driving me crazy and really effecting my efficiency.

It looks like he has his exchange account set to sync mail and contacts both in itunes and also via the exchange server over the air. hence the doubling up.

How do you turn sync off in iTunes?

Plug in iphone. On the iphone tab on the left hand side select it.
Then over to the right you will see all the tabs that reflect what you want to sync.
First tab is info. next tab is about contacts, calenders and email. It is this section that needs to be deselected
