How easy is it to set up video conferencing ?

How easy is it to set up video conferencing ?
My wife is secretary to a cat club committee whose members come from all over UK. They only meet 3/4 times a year but this is now becoming expensive with fuel costs etc.
All 7 committee members are on-line so how easy would it be to set up some way of holding meetings "on-line ?"
Don't want state of the art stuff, just a basic way in which people can talk to each other.
What is needed in order to set this up ? Do we need special software and is it even feasible on home pc/mac etc.
We use skype to chat to Grandchildren, I wondered if this can be multi-person use ?

I am pretty certain you can get services where you can connect into a multi-party video chat room
