Is your Xbox chipped?
Have a read here: Upgrade Xbox Hard Drive - Install Large HDD HardDrive
All I did, was chip the xbox, install a new hard drive boot from CD with Slayer disk (or equivelant) and then format, partition and you are done.
Edit: I still use the original Xbox in one of the bedrooms as it is a really good player of DivX movies from the file server in the house.

Have a read of this.
Basically it should allow you to get your current drive unlocked, extract the key/eeprom and then get your new drive updated and locked.
I believe it'll also help in cloning the existing disk (you'd need to unlock that using this utility as well) to the new one.
To be honest I'd seriously consider getting the thing mod-chipped. I did mine a few years ago and it's breathed new life into the xbox, as I didn't game that much. I chipped it myself (Team Xecuter 3 modchip and xaptor solder free thingy), chucked XBMC on there, and turned it into a media center. It's region free, so all my DVD's play, plus it has handled any of the torrents I've chucked at it, and it streams music from my iMac in my office.
I've upgraded the drive a couple of times too. Went from the original, umm, whatever size disk it was (20GB?) to a 120, and then up to it's current 320GB. My only gripe is that it does take a while to copy 80+ GB of data via FTP, it would be so nice if there was some way to get an OS to read/write FATX drives as I could boot up a machine with the new and old drive in it and then just copy things across.
