The restore process essentially formats the iPod, hence why you'll lose everything when you do the restore.
Where is it asking you to restore it. In iTunes? Is there a cancel option to prevent this, if so then choose that option. It's possible that it might want/need to restore the iPod, though I cannot see why. Even if you're updating the iPod software it does not need to reformat the iPod.
If there is no option to cancel the restore then you'll have to restore it and then copy the music back on.
It is not possible to copy music from the iPod to the computer using iTunes. What you'll need is a third party application, something like anapod extreme or ehpod (google search should turn them up).
