Default Mac query...Entourage into Exchange

Ok guys get yer thinking caps on

Introducing a windows based server (read the normal MS SBS 2003 stuff) into a mac only environment (dont ask ).
Server will be running Exchange obviously.
Macs are all currently running Entourage 2004 (latest build) on POP/imap accounts. Now since the macs have their databases local, the big question is:

1) what is the best way to either convert or transfer their mail onto the server and then link their accounts to the server after that?

Now i know how to sync the macs with an exchange server, that is not a problem, but my main issue is a) the transfer and b) the syncing after that.

Would it be better to class all mail before a certain date as local and then start a new folder system in the entourage as their mail after that date?
Then they could simply drag and file their mail and folders in their own time.

the syncing issue then rears it's head after that. Syncing i believe is still local, although it polls a free/;'busy server for mail, events etc, the actual database/cache still resides on the mac.(could be wrong )

Hopefully office 2007 (or whatever it will be called) will have better suppport for exchange and may even do the holly grail of .PST backups , though I am not holding my breath. anyway that is so far off i cannot wait until then.

so any ideas you can chuck my way would be welcomed.

Can't be my usual helpful self on this one. Might be worth popping over to macosxhints or macfixit forums and seeing if they can help out.
