Network analyser
Is there any software that can tell me which PC is doing what in terms of network traffic? Particularly interested in traffic out to the internet. Would Ethereal do what I want?

Unless you have a switch with a monitor port (where it copies all traffic on all ports to your port) you'll need to put this on each machine to track traffic directly to/from a machine.
Takes some getting into but its the muts nuts software.

Yep Ethereal will be fine. As Jules says, it's a great tool. All my techie guys use it on a daily basis and this is for professional ethical hacking.
If you want to look at open ports and services, then nmap would be a good option.
