I've got both Long Beach and Paris, and I'm pretty sure you can play them single player, but I think they don't appear as part of the Kudos Challenge, only as single races and in arcade mode.

Thank god for that I thought I'd been had! I took my Xbox to the father in law's to get the extra's seeing as I didn't have broadband...
