These seem to be the best available:

SW: KOTOR - XBOX
Fable - XBOX
Final Fantasy series (recommend FF7) - PS2
Baldur's Gate: Dark Alliance I/II - PS2
Champions of Norrath: Realms of Everquest - PS2

The only ones I've played are:
SW: KOTOR (PC) - great story if you like Star Wars played about 20-25 hours through light side and about 7 hours replaying through dark side
FFVII (PS1?) - I spent over 100 hours on this and I'm not even a big RPG fan it's just it was that good! played FFVIII aswell but was a weaker story and characters IMO

They are in the process of making a follow on from FF7 I think carrying on with the characters and story. You're right though, FF7 was on the PSone but can play them on PS2's however I've been shocked at how bad the graphics are on Gran Turismo 1 & 2 playing them on the PS2

Yes and no. Morrowind is far and away the best RPG out there, but it is NOT easy for a noob. Unlike most RPGs it starts hard, but gets easier. But I'd still say: get the GOTY version and try it anyway. Pick a Redguard and a fighter class to make it as easy as possible to begin with. There are loads of hints and spoilers on the official forums: enough to get you going without necessarily giving too much away. And prepare to give up all your free time for the next year...

I thought Morrowind fairly easy to get into, although I did play it on the PC. I bought it for 15 quid from play when it first came out and thanks to the mods people came up with still play it now. Some of the user quests are as good as, or better than the main quest.

I only play it on the PC, and it's better there - if only for the quest fixes! Although the GOTY edition should fix most of them. But I found it very frustrating at first, and I'm not the only one. It's very easy to run into VERY tough opponants, and the unusual leveling up system can take some getting used to. But just admire the scenery...

Playing on XBOX also means you miss out on the plug-ins, and I've reached the point where I do my own. Mainly places, weapons, armour and classes/races - I'm not going to touch the scripting yet.

XMen game is like Baulder's Gate (apparantly). Imagine Gauntlet with character stats that you build up and a team of 4 characters that you can switch between.

Have a look on www.gamespot.com and waste a few years of your life going through all the RPG info on there

We (the missus and I) are playing through Fable at the mo but have read there is only about 10-15 hours of gameplay KOTOR lasted us a good 40 odd hours each Morrowing is great to start with, but I soon found it very samey and finished it for the sake of it rather than enjoying it.

Agree with a lot of the posts on here in that Final Fantasy VII has never been bettered IMHO. I think a lot of the attraction was down to the cutey simple main character graphics that still had a lot of expression.
