Argh ! I have done this before but will be fooked if I can remember how !
I need to take the black writing off this map
I have tried the replace color thing with varied results.
Any help would be great. I have an entire map to do so perhaps a point in the direction to a step by step ?

Think you will struggle - the text is about 30 shades of grey, therefore when replacing a selective colour the whole map will turn the replaced colour.
You would be quicker using the dropper tool to match map colours and using a brush to repaint the main roads

As lightning says - too many shades of grey, they are also on different backgrounds - whites and yellows so if you select the areas you want to edit then do a fuzzy replace colour you will end up with white on yellow or yellow on white.
The way to get the best result here (in my most humble opinion) is going to be the long hard way of doing things - street at a time
I would consider getting a sharper quality map though to start with!
