Importing Outlook .pst file & IE favourites into OSX mail & Safari/ IE6
Can it be done, as I don't really savour the prospect of copying them all over by hand......

I would imagine Entourage would be the only thing capable of importing the .pst Just had a quick look at Mail.app and it offered importing from Outlook Express, Entourage, Eurdora and Mozilla. If you can get Outlook to export your mailbox in mbox format, Mail will handle this as well.
As for IE (Win) bookmarks, try a drag-and-drop into the Safari bookmarks window. Failing that, Google for Safari Debugger. This will enable the hidden Debug menu in Safari which will give you an "Import Bookmarks..." option.

Well IE for Win lets you export to HTML so you can just open this 'links' page as your home page. Entourage will let you import details from a csv file and (I didnt get that far thru it but Im assuming) it will let you do field mappings so you can get your data in. I use firefox on win now and Im gonna start using the OS X version and that certainly lets you import IE faves
