If i am creating video files, which would be the preference, taking into account I may want to play on a DVD player, Divx, mpeg, avi, etc, and can all these formats be converted to one another.

Largely depends on what your DVD player will handle. They are all "lossy" formats so you will lose quality every time you re-encode from one format to another.

Are you looking to "back up" some deleted DVD movies that you own or are these your own material?
