need a bit of advice on gigabit networking, i need to change the nics in our 4 servers to gigabit ones and also a few of the desktop machines, i was wondering what cards you recommended for the job and if you recommend gigabit fiber or copper

i would say fiber for the server coz the fiber wont be moving too much once connected. fiber is not the easiest to tie it up!

We've used the Intel 10/100/1000 Copper NICs in the past.

Just about every server NIC chipset is Intel these days...

I'd recommend fiber, but depends whats in your switch really.

Like dave just said it depends on your switch. Some switch vendors have "issues" with certain gig copper cards. The best thing to do is check out your switch vendor's compatabilty list before you buy any copper based gig cards
