My bugeye WRX runs at about 90 degrees most of the time but has been know to creep up to 95 after a spirited drive. I did a search after fitting my gauges and that seemed to be about the norm.
I have a prodrive panel filter and a cat back exhaust so mods not too different to yours.

05 wrx (>340BHP) normal driving, fully warmed up using Motul 10w40 300v sits a tad over 90c.
After a spell of hard driving the most I've seen is 98c..
Yet to go over 100 and Defi warning set at 105c, although I can't ever see me hitting that..
Obviously not driving hard enough..
Something to also bear in mind, I never over fill my oil. Halfway between min/max when cold. The more oil you run the cooler it will be..
