Yes it does

Two things...a huge feckin cooling fan on top of the engine which gave it a whining whirry sound. And also the exhaust had heat exchangers for the heater (which would gas the occupants if they leaked ). This made the exhaust note a bit raspy as obviously space for silencers was taken up by the heat exchangers.

Also old porkas has solid valve lifters which had to be adjusted every odd service, not sure of newer models, probably hydraulic these days therefore quieter.

More free-revving too IMO, but thats probably more to do with the flywheel weight and EFi -a blip of throttle on a old 3.2 in neutral would see it rev to 6000rpm within one second.

And pretty much anyone who has driven a pre-993 will have stalled it at some point. They had a proper ''mans" clutch (especially the ones with a cable operated clutch as opposed to the later hydraulic)

For mainly horsepower reasons, they went to water cooling of the cylinder heads with the launch of the 993. They then went to a wholly water cooled engine with the 996. The main reason for that change being they couldn't get the air cooled engine even close to meeting the then new EU drive-by noise standards

As you have yourself noted, a water jacket attenuates a considerable amount of the mechanical noise that an engine generates, plus a water pump is slightly less noise than a fecking big fan

Had a little bit of time at a local airfield

In car noise - not as good as the 996 GT3 but still nice in the car - video does not quite capture it.

I reckon 40-110 is between 6 and 7s including a lazy gear change

Unlikely, it must be far cheaper to continue evolving an engine you've been producing for decades, than it is to develop and produce an entirely new design along with all it's ancillaries
