Best way to do chips, par boil some decent potatoes, chopped quite thick, par boil them in stock with extra salt and some rosemary, deep fry for 10 mins at 150c, let them rest for a few minutes, then crank the heat upto 190c and fry till crisp and golden.
Oven chips are for the unwise.
Try putting balsamic vinegar in the water along with brown sugar sea salt soak chips for 1hr or so then boil in same water until just softning,drain let cool then deep fry in hot oil works for me!
Do people still use these? I aint had one in years and I am completely tempted to go buy one so I can deep fat fry everything!
I have a pro stainless deep fat fryer temp control gets really hot easy to clean,the problem with cheap pretty ones they are a pig to clean and dont get hot enough,alright for Mars bars!

Ours goes out onto thwe garden table when in use, which keeps all the cooking smells out of the house

You do realise that when you smell something, your nose detects that odour a particles in the parts per million range. So when you smell something, there is hardly any of that material there.
