Showing how old I am, as a kid I wanted a Customised Ford Capri, jacked up at the back with a Jag rear axle, side pipes, wolfrace wheels, furry interior, and maybe a rover V8 for good measure!
Only pic I could quickly find, and far more tasteful than what I had in mind!!!
When I could eventually drive, Mk 2 Escorts were the dream, eventually owned and raced a Mk2 RS2000.
Paul Baileys was for me the ultimate (RS cossy engined), and indeed if the lucky numbers came up, something similar would still be on my shopping list (probably be a rose tinted purchase but wtf!)

Some have been already mentioned but here is ones I remember fondly
Tiger Avenger even if it did come with a pool in the boot
Carlton Lotus
RS2000 though I remember a Yellow one with Black decals in my street
Firenza Droopsnoop 2.3 but the one I remember in my town was Black with silver decals
The ones I would list also are Lotus Sunbeam/Quatro/Droop Snoop Chevette/Capri 2.8 two tone/RS1600 oh the list goes on and on

I am sure in the present age you would need a dynamic Risk assessment and a safe system of work to operate those, hell I am going blind already
