Reminder/tip for next year.
Don't buy Jif pancake mix. The pancakes are too moist and so sweet that you don't need to add sugar.
The mix is better suited to American style pancakes.

Tonight we had two each with cheese, onions, ham or bacon and chopped toms. Warmed in the oven so the cheese melted.
Then two more with bananas & maple syrup & ice cream... aren't we pigs ?

Improved recipie this year:
3 large eggs
120g flour
110ml milk
1 heaped spoon baking powder
pinch of salt
Separate whites from yolks and whisk up the whites until they leave a pyramid when you remove the whisk. Bung everything else in another bowl and whisk up well. Add the whisked whites to the mixture and fold them in carefully.
Heat a non-stick pan and ladle a measure of mixture into it and cook until brown on both sides.
Mrs reckons they're the best ones I've made yet and judging the speed of consupmtion last night I don't think she was just being kind
