Yes, Delta Dash would show the output voltage from the MAF and the O2 sensors. You'd need to know the pattern and behaviour of a working sensor first just to make some sense out of the readings.
Obviously, if your car's misbehaving then adding something new will just confuse matters. Personally, if I suspected a sensor fault I'd ask someone with DD or a friendly Scoob dealer with a select monitor to have a look first. Or you could just use a digital volt meter (you need to be careful which type you use) to read the voltages.
John created his own AFR very cheaply around 1.5yrs ago. If nothing, it's a very simple method of checking whether your O2 or MAF sensors are working as they should.
If your MAF is failing (or has failed), the results will be bad/poor fuelling, so an AFR is a good monitor and you can even make your own for about £12 - which is nice
