XP all the way. It's been 100% stable for ages on three self-built systems I run at home. One of the machines I keep running all the time, and I never seem to have to reboot it. Specs are:

Abit KR7A133-RAID/XP1900+/Geforce4Ti-4400/RAID-0 Array
Abit KR7A-133/Duron1300/Geforce2-Ultra
Abit KT7A/Duron1200/Geforce3-Ti200

These are basically gaming rigs, and on games like Medal of Honour, Everquest etc, I have zero problems.
