Yep the MR2 I had for a few days tried to swap ends on me mid corner made the wife squeal which is not easy, good thing there was nothing coming the other way, sure I saw the rear wheels out of the side window proper tank slapper.

An open diff is not the best for drifting, they can go but you will have a lot more control with a LSD or welded diff. Sort the bushes, get the E36 M3 eccentric bushes for the front for a bit more castor, and have a play about with the toe. surprisingly, I found a hint of toe out best.
I'm sure you will be able to knock up a set of lock stop spacers too, although they are cheap enough on ebay.

Good point,I find my Mrs mid engined rwd car quite predictable on the limit,I can only guess if you have had it spin mid corner is more down to lack of driver skill than anything to do with the car.
