Clamp the rubber flexi hose, you can buy the proper tool but i normaly use mole grips with a rag in the jaws.
In the method above dont clamp it to tight tho or you may damage the pipe.

As above, plus remove brake fluid reservoir top and replace it with a piece of cling film under it to stop air entry.
The correct tools have rounded jaws to stop possible damage to the brake pipes.
WHY are you removing them? For refurb? They can be cleaned and painted easily in situ.

Remove pads then get a long peice of wood and jam the brake pedal to the floor. This will block gravity flow from the master cylinder. The only way if you have braided hoses as they can't be clamped.

as above cling film over the reservoir, and on my braided hoses I cut the fingers of some rubber gloves and cable tied them over the pipe ends, took very few pumps on the pedal when rebleeding after putting the calipers back on.
