Stavros, you've got to be careful. 18in is not a standard fitting even though a few people have fitted them. Maybe they will reply with first-hand experience.
The fitting problem (all other considerations aside for now) is that the rear wheel arches are a very tight fit and rubbing on the outside of the arch is very common. You have an STi without the wheel-arch liners fitted to UK cars, so you have a couple more mm's to play with - it's that close
I'm only guessing here, but I think you could get away with 215/35x18 if your wheels are 50-52mm off-set. 225's or 7.5in wheels are heading for trouble. Remember that not all tyres are the same size, even if they say they are. Some are several mm's wider than others.
I guess in summary, you're considering a very expensive purchase in an area where there are no black and white answers. The only way to be 100% sure is to actually fit them.

PS What's wrong with 215x40x17 on 17x7in wheels and 50-52mm off-set? Cheaper, will fit, more comfortable, and less danger of damage hitting a Cyrpus pot-hole (quite a few of them around Cyprus, as I recall ).

i think 18 inch look much better on a subaru impreza since the 17 inch look like 'baby' wheels on it.
about the pot holes you said......yeah we've got some but a big project goes on in Limassol at least where i live fixing all the main roads....actually our roads are very good for a rally bred car......only joking they are not bad.......we havent got humps or bamps on the roads though
