why use shims on STi brembo's

These are anti squeal shims. Leaving them out won't do any harm but brakes may squeal (surprise), depends on pads you use. Personally I leave them out as I think brake feel is slightly better without.

I use copper grease always, shims or not.

Yes, always copper grease backs of pads and edges.
