Default Differences between 215/45/17 to 215/40/17

What would the differences be if I fitted 215/45/17 instead of 215/40/17 to MY00 Impreza? Apart from the fact the tyre will be 5mm taller!

Not bothered if speedo will be slightly out, but will it affect handling? car is on Eibach springs.

The tyre will be 21.5mm taller. The 45 and the 40 are aspect ratios i.e. percentages of the width.
The handling will be affected, a bit less response to the steering but a softer ride on our bumpy roads. Both effects are small and would be hard to feel.
