Go to AP Racing website. They have templates you can print off (make sure the printed scale is correct) which you can stick to cardboard, cut out, and then try for size in any chosen wheel (if you have access to the wheel).

The original AP 6 pot kit with CP5570 caliper and 330mm discs is designed to fit under 17" wheels. I can't see that anyone could be incompetent enough to make an 18" wheel with rims so thick that it fouls brakes designed for 17" wheels so 99% likely that you'll be OK.
For 18" wheels AP bought out a year ago a different 6 pot kit with CP7040 calipers and 355mm discs. This fits some 18" but you'd be wise to confirm it's OK with these wheels.
Are you aware the latter kit is actually cheaper, due to the model of caliper, so wouldn't you be better off going for the 355mm disc? Provided it fits of course.
There are relatively few people running 6 pot calipers around, the chance of someone running them with your choice of wheel I would think is pretty small.
Can't you visit your wheel supplier and try the template in it? If mail order why not get them to print it out and try it as a condition before you buy the wheels? Get it in writing that the template fits in the wheel. Then when the wheels arrive if they don't go over the caliper then the suppliers have got it wrong and will have to take the wheels back..... Maybe.
