Simple really.
There are the 2 bolts that hold the calliper onto the hub, something like 17 or 19 mm, that allow the calliper to be removed prior to disc removal. The pads are held in the calliper by the pins that if tight can be removed using a pin punch.
If the discs are tight onto the hub and you are replacing anyway, a light tapping with a hammer should free them off. Take out the retaining screw first if you have one.
Just remember not to let the calliper hang on the brake hose, use some wire to hang it from the strut or spring.
