Fitting coilovers to a Classic Turbo 2000
I'm looking to fit my coilovers, am i right in thinking all i need to do is remove the 2 bolts at the bottom and the 3 bolts at the top?
Do i need to compress the springs?
Will a big bar be enough to break the 2 bottom bolts?
How did you remove them?

If the struts have not been off before then you will need to cut the bracket of that holds the brake pipe in place.
If you are using the original top mounts then yes, you will need to compress the springs (off the car) to remove the top mounts.
It's very straight forward, two bolts on the strut leg, 3 on top. For the fronts you might need to undo the anti-roll bar to get the strut out.
I used an 18" breaker bar which did the trick.

When the 2 strut bolts have been remove, won't this allow space to pull down on the suspension to remove it will out compressing the springs?

If you are removing the complete damper and replacing with a complete coilover, you do not need to compress the springs. Just remove the bottom 2 bolts and undo the top 3 nuts. However, like Ben says, remove the brake pipe from the strut before you remove anything else.

Additional install tips:
Bottom nuts/bolts are 19mm. Make sure you're turning the nut and not the bolt. Much easier to remove, especially as the top bolt is a camber bolt.
Tophat nuts are 12mm. If you reuse these tophats be very careful on install as the torque is very, very low on these. 14.5 ft/lb. Any more and you will shear the stud right off the tophat.
