I've only recently done it so it's too early to say, however I would guess it would be pretty durable as far as stone chips go. Certainly more durable than paint.
The good thing is that it's not permanent, so it's easy to change your mind.
As in are they designed to improve handling like they had in the 24hour topgear challenge with the diesel BMW or are they only serving a cosmetic purpose, as they do look good.

How does more air get underneath? Theres less space for the air to get to and the angle looks as though it would lift air up, pushing the front down, making the front end heavier and improving front end grip. Have I got this all wrong?

With no splitter more air is going to get under and lift the front.
This is what the TG guys were complaining of when they lost theirs, so no they're not just for show...
how easy is that 3m stuff to apply? can it be done with the splitter on the car?

Depends on the splitter, mine was quite tricky and had to do it in 3 pieces. You can keep repositioning until you're happy. Splitter needs to come off.
