Default FAN PROBLEM

Here's my situation guys...
I now have a reversed inlet manifold mod which ment taking out all air con stuff compressor/pipes ect.. Also installed a front mount intercooler while i was at it. But now I have problems with my fan as soon as it gets upto temp it kicks in and is on constantly.done abit if research and was told its either the coolant temp sensor. Or taking the aircon off has tripped the fans and it need unplugging at the bottom of the fan/rad or something
Does this sound right ??

If it is the coolant temp sensor isit hard to install a new one ??
