I used to regularly see 90-95 deg C on my oil temps in traffic or on a good blat (WR1). On track I used to back off when up to 110 deg C which it got to fairly quickly... Since I had an oil cooler installed, I normally see ~85 deg C and have never been over 108 deg C on track (when it was 27 degrees C ambient temp last summer).

Mine sits at 90 all day.
It can go to 95 when being pushed hard on a hot day.

So is it safe to be sitting at around the 95 mark? What temperature should I start being worried?

From what I understand oil starts to break down over 120 deg C and loses its lubrication properties. 95 deg C is no problem.

Mine sits at 85 all day long and sometimes touches 90 under hard driving or sat in traffic.

10w60 oil is not recommended by Subaru.
Different grades of oil will run different temperatures.
Classics run cooler 85-90C typically than New Age 90-95 and sometimes more.
Fitting a front mount reduces the air over the engine so there is a natural small oil temperature increase.
I have been told by several oil manufacturers not to exceed 140 deg.C. and if you look at Porsche and VAG cars fitted with oil temperature guages as standard you will see that the red line starts at 140 deg.C.
On track I would run to 125 deg.C and come in to the pits when that temperature was reached.

Believe it or not I noticed a drop in temps after fitting a reverse style bonnet vent and a set of bonnet raisers.

So which is the best grade oil to use on the blobeye?

^ 5w30 is in the handbook, I plumped for 5w40 shell helix fully synth in my bug though.

OP - mine tends to sit at 85-90 but has broke the 100 barrier on a recent hot day after a run.

The handbook states 5w30 and if the engine is in good order that is what you should use, particularly in Winter. Personally I would use fully synthetic such as Royal Purple.

Mine to sits at around 90ish after some boost on the road, and 85ish on general driving.

It was just under 110ish on the track at the weekend.

I use Millers 10/40.

I was told by the garage I use that the only time they need to do a engine rebuild is when the owner has use a 5w oil, I was recommended 15w50.

It will depend on the age of the engine. Classics use thicker oil than New Age but I think Subaru might know a little bit more than a local garage about what oil should be used, particularly in newer cars. I was using Motul 15w50 in 3 of my own Classics, all forged and steel engines but on New Age I run 5w30 in the WInter and 10w40 in the Summer.
Check your handbook but a radical departure from the manufacturers recommendation is unwise.

My handbook states a 50 oil can be used for heavy duty and/or high ambient temps. I count a remapped engine driven hard as heavy duty so use a 10w50
