Default Zerosports thermostat problems

Had a zerosports stat fitted to my 2006 Hawkeye (2.5L STI)

This morning it was about 6 degrees outside and the car struggled to maintain water temperature - it kept falling to between 1/8 and 1/3 from the bottom.

Is this normal? Is it ok to drive the car with such a low water temp?
