Default Temp Car Insurance for every now and then?

Seeing as impreza insurance is so expensive, this got me thinking.

I insured my T2000 for a week at £25 but it was my daily. Now thinking of another Impreza but only as a weekend toy, the car would be of the drive mon to fri, so what is there stopping me taking out a temp car insurance policy when I fancy taking the car out?

Has anyone done this before or does anyone do this????
