I have a 95 1.6 GL what version is it and whats the difference between the versions 1&2

It's a GL.

Ver 1 & 2 are WRX's. Not a great deal of difference between them, but irrelevant to an N/A UK car.

The brakes from a V1/2 would be an improvement for your car though, as would the interior,

Your car is neither a V1 or V2 (there isn't actually a V1, it was just called a STI). The version number was given to STI models only.
Your car is just a 1995 Impreza GL otherwise known as an early classic non facelift car.

Teeeechnically speaking... The first STi in 1994, was in Japanese called the "STi バージョン", or for those who don't read Japanese, the "STi Version".

So as opposed to a normal WRX, it was a WRX "STi" version...

After that they introduced the WRX STi version 2,3,4 etc...

But yes, you are correct in saying that it only applies to STi models (including the first STi in 1994) and the "STi version 1" is actual just called " STi version"
