Yes, that will work. On mine, when I had my engine rebuilt, the builder put the Defi sender where the OE one was, on top of the block behind the alternator, it's fed by one wire. He wanted the more accurate gauge in the best position.

He left my OE gauge disconnected, but I found mthe gauge being constantly at zero a bit disconcerting, so bought one of the above and fitted it into my top hose, after extending the wire slightly.

Don't forget an earth wire from the adaptor to the car's earth, or your nice new gauge probably won't work

38mm on a classic. AFAIK, newage are the same.

Cut it ACCURATELY, OFF the car, fit adaptor etc, then fit hose. Use GOOD QUALITY jubilee clips Mine had a new hose. Cutting the old one caused it to split.

I cut mine with a kitchen knife, over a piece of wood, having marked the hose first, and turning it as I went. The knife had a non-serrated balde and was SHARP........I know, 'cos I sharpened it
