would you say these are the best plugs for MY03 STI....

If your car is pretty standard, you'll see little benefit over the standard fit PFR6G, however, they offer a margin of safety if you are running higher boost along with other mods. Use 0.65-0.70 gap

I assume 6 are hotter, if are running them and they aren't white then they are fine, if they're covered in a fine white powered then you need cooler plugs as they are over heating. The issue with running too cold a plug are if you do lots of starting/stopping, they will foul up and you will have starting issues.
