Will these fit over AP racing 355mm brakes (18" size)

99% Sure they will. They run them on BTTC Cars and they run bigger combo's than that

I did a template check and you can get 355's behind the 17" version with a 45 offset so 18's shouldn't present any problems.

Yes they do, I have that exact combination on my Hawkeye.
