Speeding summons but what evidence

Hi peeps
Now i know there has been lots of different posts on speeding but me and my mate were out on the bikes last tuesday coming back through Baslow in Derbyshire and a copper was sat in layby with a forward facing camera/speed detector type thing.
Now we were only doing 40-50 if that... in a 40 zone and my mate was up front and the copper glanced at his number plate as we rode by his vehicle, Now this was definatelly a forward facing camera and copper didn't seem to write anything down at all.

Mate received a fixed penalty notice the other day for that incident doing 48 in a 40!!!

What evidence is needed to prove it was him when no photographic evidence of the number plate is available ?

Would 1 officer on his own be able to prove this ?

It is hard to identify a biker anyway so what are his chances ?

Is it really worth persuing if no number plate is in the photo ?

He has asked for photographic evidence anyway so we will see what is on it !!!
