If I buy an 2000 X-Plate Impreza from a non Subaru dealer, will Subaru still honour any remaining warranty.

As long as it's still within terms of warranty conditions - ie full service history then it won;t be a problem, same thing as when you buy it privately really. You must get in touch with IM though to register as new keeper.
Make sure u get the service book and check it's stamps, services must be done by milage or 6m, whichever sooner.
