Default re-wire a scooby ??

My car has been stripped out completely to a shell for a re-spray amoung other things, now my question is would you re-wire the car when putting it back together or should i simply re-thread the scooby wiring loom ???

I know it's a huge job but could i do a neater job with a fresh install and remove half of the factory fit wiring that is not used ????

What are your thoughts please ?????

Thanks
Chris.
