Hi Dave Since your car will be new and under warranty, if you want to keep this your only option is the PPP which is quite a good VFM and effective package on the MY03. It retains legal emissions, gives you a nice exhaust and a power upgrade, but more importantly a lot more torque. It adds resale value to your car.
If you are not bothered about losing the warranty then you could fit freer flowing aftermarket systems with no cats at all and get an aftermarket tune of the original ECU or choose an aftermarket standalone ECU.
Two other things to consider are getting the geometry setup (yes even on a new Scooby they are often far from ideal - manufacturer's tolerances are wide) - pay £30-100.
Also braided brake lines (£50 + fitting) and DOT 5.1 fluid (£10) are also a good bet, as are uprated brake pads (£80 upwards). Subaru may be able to offer you Prodrive pads for the 03, but the brake lines would be aftermarket.
These upgrades however are cheap and effective.

As john said,
ppp will still be covered with the scooby 3 year warrant.
I myself could not spend £20k then lose the 3 year peace of mind.
I'v booked my 03 into scooby to have its heart transplanted on the 12th, "WITH A CERTIAN AMOUNT OF PIECE OF MIND"
CAN NEVER GET THE PIECE/PEACE BIT "LOL"

I went for the "alternative" PPP with changes to the exhaust and a TeK2. (I have a Dutch import MY02)
Much cheaper....but a bit like gambling on Man Utd to win the Premiership this year....Back of the net !!
Midlife...
FAO. John(Banks)...see above, I just hope that the standard Tek2 is pretty conservative...is it still OK with a full De-Cat ??, Haywood and Scott pipes arrival imminent.
Cheers
