Having continued the search country wide for someone to do a decent job of servicing my STi and answering all my stupid questions, I found myself visiting Barretts Motorsport of Canterbury.
Very impressed, all the little jobs I mentioned beforehand but forgot to mention when dropping the car off were done, everything fitted on time and no problems at all. Geometry setup properly unlike the last two people and some nice track day tyres fitted at the same time plus the car got a clean inside and out.
Good job I didn't smash it up on the track the next day....(very VERY nearly did

All in all very impressed and will be making the 300+ mile round trip again.
