tracing a car's lost service history
I recently went to look at a nice black, blob eye, sti. It ticked all the boxes in terms of milage, condition and owners. The only thing that put me off the car was the lack of service history. The car had a few old m.o.t certificates and a couple of recent receipts for cam belts etc. If I could trace the original dealership and buy a new service book would the dealer have records of what service's they carried out on the car and be able to stamp the book? Obviously if the car changed hands after just couple of years and was seviced else where this would not provide me with much history. But if the original keeper kept the car for a decent amount of time and used the original dealership it maybe worth looking into? What's your thoughts?

Have you quizzed the owner - tried to trace previous owners? Worth contacting Subaru and dealers and trying to piece it back together.
I'd expect the current owner to know basics such as recent oil changes, pads.
If can you negotiate the price down significantly and the car otherwise checks out I'd still consider a car without extensive history - use the money saved toward a thorough service and start building your own history.
