Like all of us, especially me, there is a LOT to learn. Part of the fun on Scoobynet!
Get your basics straight first, buy the Haynes book (Halfords) on Impreza Ownership. It covers all the detail, the differences and the 'factory' specs.
Read intensly the Drivetrain/Projects/Suspension threads and a common denominator will appear.
There are some real experts on here (NOT me, I'm the apprentice) and a lot of practical help too. You can cut through the BS very quickly.
Just keep posting questions!

Leave the engine alone.
Get the suspension tweeked (easy/cheap)
Consider 4 pot brakes up front.
Fit the best tyres you can afford.

The MY97UK is the equivalent to a version 3, though there are some differances in the engine and equipment departments UK = 208BHP, STI = 280BHP
All good suppliers will know what car it is if you tell them it's UK 97
What mods you do depend on what you want to use it for!
If it's a road car fo getting you to work and some fun at weekends (like most of us). I would recommend some good tyres (Goodyear F1's) and maybe some 17" wheels to fit them on.
This will help the handling some and look good with out ruining the ride quality.
Whilst getting the tyres done got the suspension geometry aligned with a good laser system to Prodrive settings or some recomended to you by someone that really knows what they are talking about. Subaru are known to have quite a wide tolerence from the factroy let alown after 7 years
Most of the exhausts on the market are pretty good. Get along to a meet and listen to a few to see which you like the sound of. Most common are the H&S (Hayward and Scott) and Scoobysport, but there are many more like Magnex, HKS and Blitz (both quite loud! with a 4.5" tail pipe)
There are 3 main parts to the exhaust system the backbox, centre pipe and the downpipe. On a UK car the centre pipe has a cat in which is easily replaced with a new centre section. The Downpipe has the main cat in and replacing this gives the greatest gains but can be an awkward job!!!!
A fully decat system should give you about 230/240BHP
The brakes are worth looking at as you will find they really aren't the best feature of the car 4 pots from the later cars is a good upgrade at about £300, though alot can be said for upgrading the disks and pads. If you win the Lottery AP 6 pots are £1700 (and if you do, I'd like some as payment for the advice)
That lot should keep you on the right path untill you have amassed the knowledge needed to make your own "informed" choices

For 300BHP I suspect you will need a remapable ECU (eg.Link,Motec,Gems etc) a new turbo and the exhaust.
I would do the brakes and suspension first though. They will help you to keep it on the road
