Depends on budget and how much space you need and performance you want. Best compromise must be a modern 4cyl diesel engine. All of the current manufacturers make very similar 4cyl diesel engines so choice would come down to other factors. Dont go for 6cyl diesels as the economy is no where near as good compared to the 4cyl variants. Avoid auto boxes and 4wd to as these adversely affect economy too. If you do a lot of motorway driving then ideally you want a car with tall gearing so you get as low revs as possible at motorway speeds. Only way to determine this easily is to test drive all the cars on your list.

If you need a reasonable amount of speed, space and economy, any car with the VAG TDi 110bhp motor will do. Very economical (i.e. 50-odd to the gallon on a run) and quite punchy too (185 lb-ft). Also reliable.
Think Skoda Octavia, Golf mk3, Toledo etc. These are all pretty cheap now, under 5K anyway.
If you've got more to spend, the Ford TDCi Focus and Mondeo are good for economy too.
