You might be able to sneak in a Passat or early A4 with the 110TDi motor, these are normally priced above the Mondeo / 406 equivalents but you might get lucky.
Also look out for an early A6 110TDi, these can be cheaper than the A4 as they're less in demand ....

Might sound a bit crap but I bought an Escort TD Ghia on an N plate with FSH and only 88,000 miles which for a diesel is not bad. I also had a £2k budget but only spent £850 and just got the cam belt changed as it was due. It does about 500 miles to about £35 with motorway driving. So far its been excellent cruises nice at 80mph. I looked at loads of diesels under £2k from pegeouts to fords to skodas and all had really high mileage. I suppose for a diesel it does not matter on the mileage as long as its serviced regularly but I wanted a low miler.

I've just acquired a 1997 Rover 420Di for similar means. Cost a grand... and it's got air-con, electric windows etc... a better spec than my Scooby! Supposed to be able to easily get over 50mpg... which is nice.
