Two things that I use it for:
1/ Multitasking on a 3G (so I can have Skype running in the background)
2/ Using Myfi so that my iPad can use the iPhones internet connection

The big one for me is customising ring tones and more importantly, text message alerts (i hate the limiting 10 or so that come with it - and that's coming from a self-professed Apple power-user)

is it as easy as going in to itunes to change it back if needed?

Email addresses set up in Gmail on the PC get their mail pushed to the device free. I personally don't use a Gmail address for mail but had one set up years ago and so used it for the main purpose of allowing my other addresses mail to be pushed to a phone.

I have iPhone 4 and iPad both with Jailbreakme, the iPhone is on 4.01.
Can't see much point in upgrading to 4.1 apart from the HDR photo option which might be nice, will probably wait and see how it goes.
Don't really use the Jailbreak for much either, filesystem access is nice, on the iPad played with some multitasking options but they were not stable.

iOS 4.2 will be out in November and it will unify the iOS releases across the various devices it supports, including bringing multi-task to the iPad.
One hopes there is a mac version of limera1n, I'm too lazy to hook the 3GS up to a PC to JB it further (I am running 3.1.3 at the moment and was waiting for a 4.1 JB before upgrading).
I don't use many of the JB capabilities, but it is quite handy to have a JB'd phone for testing purposes at work, so one can access the file system and application sandboxes. We don't want to JB the dev phones at work, even though we know we can restore them to a virgin state.
