Leave them out the fridge for half an hour before cooking, rub both sides with olive oil, season with salt and black pepper.

Get grill pan very hot, chuck in steaks and leave for a couple of mins to seal, turn over and do same, leave to cook to required taste.....enjoy

Hi Neil, how's things

Oil the steak not the pan. Season with salt and pepper.

Get griddle or frying pan fairly hot and put steaks in. About 4 mins on each side for rare or 5 for medium.

Job done.

I think they will cook much better at room temperature. Depending on how thick they are 4mins would be closer to medium than rare for a normal British cut.

leave the steaks marinading in real beer for a good few hours

or

rub a little soy sauce and worcestershire sauce on both sides and leave for half an hour

or

cook plain, just lightly oiled both sides, i'm not keen on adding salt and usually put peppercorn sauce on it after

as far as cooking, depends on your pan, thickness of meat, personal preference
about three mins max each side for me, i like them rare (20mm thick ish)
have converted my missus from well done to med rare by slowly cooking hers less each time, so much more flavour when they are juicy

Firstly and most importantly , and no-one ever seems to mention this , you need to buy good quality well hung meat. Rib eye is very good for frying as it has a good fat content.

Remove from the fridge about 45 mins before cooking.

Season with black pepper , not salt as it will draw any moisture out.

Rub a little oil on each side of the meat. Not olive oil as it smokes at too low a temp but either groundnut or sunflower oil.

Heat a cast iron griddle or a heavy frying pan til it is smoking hot. To check this flick a little cold water on it and it will sizzle away in an instant.

Cook steaks for 2 mins a side for rare ( depending on thickness) and do not move them whilst cooking as they will come unstuck naturally as the sugars release and caramelise.

After cooking allow to stand for 5+ mins before serving . Enjoy!

My advice would be, don't go too rare with this cut of meat.
With the fat content of ribeye, medium is a good option - it ain't fillet.
