You cannot, with just iTunes, copy music FROM your existing iPod TO iTunes, or another iPod, you can only copy from iTunes TO your iPod, it's Apple's way of copy protecting things.
To echo Devildog, if you have all the music that is on the iPod in iTunes then it's a simple case of syncing the new iPod with iTunes and all the music will go on there, wether you do it automatically or manually is up to you.
If there is music on the iPod that is not in iTunes then you'd need to get that off the old iPod and into iTunes, Have a read of this as it details exactly how you can do this.
