Default Roasted vegetables

Just recently i discovered roasted vegetables and am addicted to them now

I have never been a lover of the healthy stuff but roasting them in olive oil with the roast is heaven

What vegetables can you roast and is it unhealthy to cook them like this?

Big potato's cut into chips, peppers, red onions, parsnips.

Crush a couple of cloves of garlic on the tray with them.

I forgot you can roast peppers. I use garlic when i roast and i am growing red onions and peppers. Can you roast part boiled swede?

I love roasted veggies Try putting a little light soya sauce, lemon grass, olive oil and sesame seeds in, yum yum

Carrots, turnips, parsnips (a real favourite of mine), onions (pref red), beetroot, sweet potatoes, aubergines, swede (nice with maple syrup) and many more.

And in olive oil - pretty healthy.

Cool, more ideas

I am going to be growing a huge amount this year so i will have plenty to roast.

I cant believe i never did this before lol. Its taken a bit of work on the cooking times so as to not incinerate anything but it even tastes good burnt

I am feeling peckish now

I am going to have to stock up on the olive oil, it uses loads and a non stick pan is a must!

Why does the veg taste sweet when its roasted?

It caramelises - some veg more than others. That's why I love roasted parsnips so much - they go really sweet. Worth glazing carrots with honey or similar if you roast them - they are amazing.

Just get bog standard olive oil - you don't need expensive stuff for roasting.

Also you need to use a lot of veg. I found that out to everyones dismay when i did dinner a few weeks ago. The veg was a tiny pile on the plate

I don't like apple sauce on my meat as its sweet but roasted veg rock

Damn i need to go to the supermarket tomorrow now for veg for tea after this thread.

I have already eaten but i now feel hungry again as well

No point using olive oil (unless you like the taste) use a neutral oil like groundnut or Sunflower (high heat) refined, olive oil also has a very low smoke point.

Olive oil is also more unhealthy then any of the above when it is heated, its good for you if drizzled over salads etc

Get a veg box delivered - we've been using Riverford for four years. Very good quality and works out pretty cheap too.

Our little six month old boy loves their fruit and most of their veg - we've had to upgrade box sizes!

Dedrater - Jamie Oliver, Ric Stein and several top chefs seem to think olive oil is the right one to use... And look at the Mediterraneans - much healthier than us thanks partly to lots of olive oil.

Roasted sprouts are lovely, i even got someone that doesn't eat them to admit they tasted quite good roasted. Also leeks are good roasted, and as above parsnips and sweet potato.

I just had a look on the site for Riverford but unfortunately they wont deliver to central Scotland.


I will look for something similar up here though.

I don't normally like most veg but love it roasted. I throw the veg in a colander, drizzle the oil over, and sea salt and black pepper then chuck them in a roasting tin that already has a thin layer of hot olive oil. We do red onions whole (but semi-sliced open in quarters), sweet red peppers, parsnips and carrots for about 40 mins @ 180 and spuds for an hour from raw, not parboiled.

I always believed that olive oil was the best oil for you.

Do hot peppers stay hot after roasting?

Even my daughter likes them. I roasted dwarf beans, they were black when they were served up but they tasted really nice

I am starving now

I might try roasted sprouts. I love them raw but they make me gag when boiled.

I am growing everything that i can this year in the garden. I have a pretty good set up under net frames but the only trouble is that i have to wait months before anything is ready.

Never heard of a veg box but it would be handy till i can use my own

They make me heave, even if i smell them. I had to eat them as a kid and they tasted like licking the end of a battery

There are about 20 different grades of Olive Oil, they won't be using the £6/ltr ones, they will be using something like Pasquini at a minimum.

Butternut squash tossed with olive oil and black pepper and roasted is nice - you can also toast the seeds which are rather tasty too.

Mixed peppers, onion, garlic and a sprig of rosemary all roasted together is another one of my faves.

What he said.
Olive oil breaks down into unhealthy burned components at a much lower temp than sunflower and groundnut oil so when roasting it is better to use those.

Any old veg, a slug of Castrol GTX, sprinkle with sea salt.

I find the best way to roast spuds is to parboil them 'til the surface is loose then drain (keep water for stock) and bounce 'em around in the pan so they go all fluffy.

Then roast with a little mixed herbs sunflower oil and a touch of butter for an hour at about 160-180. they come out with a crisp coating and a gorgeous soft middle.


Great now *I'm* hungry!
