Default Quick & easy recipe required.

I have a friend coming for dinner tonight & i am sick of eating out all of the time so i thought i would impress her with my culinary skills

Basically i cant cook for ****. So need something thats quick, easy, looks & tastes nice.

She wont be at the house until about 7:30pm, so i have sometime to get it organised.

Ingredients.

2 chicken breasts
8oz mushrooms ripped up
2 cloves garlic finely chopped
few slices of pancetta (or parma ham) cut up into bits
some thyme
50g of butter
Glass of white wine.


Method

Make a tin foil pouch about the size of an A4 bit of paper
Put everything in the pouch
Seal it up
Put it in the oven at 200 degress C for about 30 mins

Serve with whatever you have to hand potato and veg wise.

Job done.

shepherd's pie.

500g lamb mince
1 onion
half a tin of chopped toms
3 baking potatoes
1 table spoon (not a tea spoon, the bigger one, but not a **** off massive spoon - i never can tell these apart) of plain flour
1 table spoon worcester sauce
1 lamb stock cube.
butter
25g lard
optional - egg yolk

at the same time
add the sliced onion to a pan with the lard
brown them a little, then add the chopped toms.
also
brown the mince in a frying pan with some olive oil

boil 275ml water in the kettle.

add stock cube to the boiled water (this is where you need 275ml ), the plain flour and worcester sauce.
make sure it's all mixed - i use a whisk to ensure it's all smooth.

add the stock to the toms

drain the mince, add that to the onions/stock/toms

let that simmer for 20 mins

boil the spuds for the mash (salt the water)
mash with some butter and the egg yolk if you want.

serve

40 mins all in

Beef Stroganoff

One onion finely sliced
70G butter
1.5 tablespoons of paprika (smoked paprika if you like it hot)
punnet of baby button mushrooms finely sliced
6-8oz of steak (fillet if you can get it) cut into 5cm long by 1cm thick strips (against the grain) seasoned with salt and pepper
Linguine pasta
Parsely
Half a lemon
150ml of Sour cream

Method

Gently fry onions in the butter and paprika until soft
Add mushrooms
Fry for another 5 mins or so
Empty intoa saucepan
Get the linguine on the go.
Turn the heat right up and add a tablespoon of veg oil to the pan (same pan as you cooked the onions in)
Wait unitl smoking hot
Add half the steak to the pan Fry for one min
Place on a plate and then fry the other half
Put steak into saucepan with onion mix
Turn on to a medium heat
Add sour cream
mix
add parsely
and juice of lemon right at the last minute.
Serve up with linguine.

Fresh Gnocci
Tub of herb and garlic Philidelphia
Ham
Peas
Parmesan

Melt the phili in a pan, add a dash of milk if needs be, add peas and ham.
Cook Gnocci in boiling salted water - 2 mins
Drain Gnocci and add to phili mix
Serve, shavings of parmesan on top.

5 mins start to finish, 5 ingredients, doesn't come much easier!

Meatballs & spaghetti -

tub of fresh mince.

Loads of black pepper & crushed sea salt
worcester sauce
bit of garlic puree or 1 segment of crushed/sliced fresh garlic
Bread crumbs
1 egg

Mix all together, (get your hands dirty!)

Make small meatballs - about the size of a golf ball

Put on a tray - cover with cling-film and store in fridge for about 30mins

Sauce - jar of passata sauce
LOADS of black pepper
some salt
garlic as above
fresh chopped cherry tomatoes

Heat up in a pan


In the meantime, get some half decent spaghetti and chuck it in a pan of hot water with a teaspoon of olive (or normal cooking) oil.

Cook for 10 -12 mins (depending on how 'al dente' you like your pasta)

Whilst this is going on....

To cook the meatballs, slow fry in a pan of 2 tablespoons of olive oil (again, with a bit of salt & pepper)
Once browned off (the meatballs, not you!), put them in the tomato sauce to "soak"

Drain and serve pasta.
Put meatballs on top first.
Put sauce on (amount is up to you)
Put a bit of either mixed herbs or grated parmesan

Serve with a glass of red wine!!!

2 packs of cooked chicken (BBQ or Tikka will do)
1 bunch of spring onions
Pack of wholemeal pitta breads
Nando's hot sauce
1 iceberg lettuce

Grill chicken until warm, grill pitta bread
shred onion and lettuce

whack it all together in the pitta with a slop of spicy sauce

takes 10 mins and zero talent

baked Camembert is about as simple a starter as you can get...

2 camembert in the little wooden case - remove any plastic

pierce the top 6 or 10 times. shove a few little chunks of garlic in there, a teaspoon of white wine on the top to soak into the holes (still in the wooden case, btw) and cover lightly in foil, bake at 170/gm 5 for 20-30 mins.

make a hole in the top and dip a french loaf. don't burn your tongue though as it's like napalm lol

Forget all these namby pampy fancy recipes, all she needs is a simple dish that has a meat and 2 vegetables.
